Oolong Teas

1991 Da Ye Aged Oolong
Our 1991 Da Ye Aged Oolong is a 22 year old spring harvested tea from Nantou, Taiwan. This rare tea is oxidized between 20-30% and charcoal roasted. Da Ye Oolong is uncommon today since this tea has a lower production volume. Our 1991 Da Ye Aged Oolong is sweeter and creamier than our 2003 Reserve Four Season Oolong. Notes of roasted chestnut, bark, fresh butter, honey suckle, and cinnamon can be detected. Due to the age of this tea, some mineral notes may also be detected. This tea has a silky mouth feel and is sweet and buttery.

Da Yu Ling Oolong
Our exceptional Da Yu Ling originates from the mountain where the Nantou, Thaizhong, and Hualien counties intersect in Central Taiwan at an elevation of approximately 8,500 feet. Da Yu Ling Oolong utilizes the Ching Xin (Tender Heart) varietal and is oxidized between 15-25%. This first flush winter harvest tea is remarkably sweet, buttery, and refreshing. Incredibly fresh orchid and lilac notes mingle with Bosc pear and spinach notes followed by light spearmint notes that linger. Subsequent steepings are a little more vegetal. When following gongfu methods, the second and third infusions are the best but will produce about six quality infusions. For gongfu preparations, we recommend infusing 2 level teaspoons of tea in 6oz of boiling water for 2 minutes. Please note, our recommendations are pretty heavy on the leaf requirement; however, the number of servings can easily be increased by reducing the leaf amount and increasing brew time. This tea is not eligible as a free sample.

Maple Pecan Oolong
Our Maple Pecan Oolong utilizes our Nilgiri Frost Oolong base. This smooth, silky tea has maple notes that develop into pecan notes then finish with maple notes that linger. Some citrus notes may also be detected. The flavors weave together brilliantly and are well balanced with the oolong base. With a little sugar the maple and pecan intensify for a wonderful desert treat that resembles a pecan pie. The long thin chocolate colored leaves are hand twisted and produce a weighty body. This smooth tea has notes of citrus, peach, pecan, and oak. There are many qualities similar to a Nilgiri black tea; however, the frost oolong is much gentler and sweeter. Traditional Plum Pudding (Holiday Series: Yule)
This tea follows a more traditional form of plum pudding. Plum pudding is cake-like treat that is soaked with liquor, spiced and contains dried fruits and citrus peels. This plum tea has notes of rum, spice, brown sugar, orange peel, and a slight hint of custard. We went very light on the spice and orange peel but added it for a touch of depth and authenticity. This delicious plum, rum, and a touch of spice tea utilizes our Nilgiri Frost Oolong for a weighty body and a hint of sweetness. While tasty on its own, this tea pops with a tiny amount of brown crystal sugar.
