Lemon French Macaron
This tea was created by the winner of our Custom Blend Contest. In October of 2013, we held a contest to send in ideas for a custom blend. A panel of judges chose the 10 best ideas and we created a poll on our site. The concept for this tea won the most votes, so we worked with the winner, Mary, to create her dream blend. This tea embodies the flavor of a lemon flavored French macaron and has rich cream and sweet cake notes. Almond notes can be found weaving their way through each sip of this decadent dessert tea but give way to mild French vanilla and malty notes. Lemon is the most prominent flavor and is mellow at first but then finishes tart. The zing of the lemon and creaminess linger long after each sip. We recommend sipping this tea at cooler temperatures. Adding sugar will mellow the lemon and transform the tea into a dessert treat. For a short interview on the making this tea, please click HERE.

Latkes & Applesauce
Our Latkes & Applesauce tea pairs our buttery Taiwanese Bi Luo Chun with generous potato pieces and crisp apple chips. Plain, this tea is thick with potato notes up front followed by apple and cinnamon notes with some buttery notes that peak through at the end. As the tea is repeatedly sipped the buttery quality will become more apparent. The weighty body adds to both the potato and applesauce feel. Since this tea is on the lighter side, we recommend drinking this tea at a warmer temperature. For stronger potato notes we recommend adding a very small amount of salt; however, this may diminish the applesauce notes. For a sweeter applesauce, we recommend adding a tiny bit of sugar; however, this may reduce the potato notes. Please note the picture shows our old blend, not the current tea and the amount of cups per serving is incorrect.

Peach Beer
Our Peach Beer tea is very similar to our Peach HoppiTea. The base tea has been switched from a Nepalese tea to our Thurbo Darjeeling. This blend pairs our Thurbo Darjeeling tea with Cascade Hops and peaches. Cascade hops adds a touch of bitterness, somewhat like grapefruit, and is unmistakably hoppy. The peaches add a hint of sweetness that contrasts the bitterness well. The combination of these three ingredients creates a truly unique tea. We recommend allowing this tea to cool to a warm temperature for a more beer-like flavor. For a sweeter flavor, sugar may be added but will reduce the intensity of the hops. To read more about this custom blend experience, click HERE for a short interview with blend designer. Please note, this picture is of our old blend not the current tea.

Sansia Black
Our Sansia Black originates from Sansia, Taiwan. This region primarily focuses on green tea, making this an unusual tea. Our Sansia Black utilizes a local varietal, Qingxin Ganzai, and is AAA graded. Pesticides are not utilized on this tea to allow green leafhoppers to bite the tea leaves, which causes the leaves to begin the healing process. The healing process creates the honey notes in this tea and the bites begin the oxidation process. Our Sansia Black is malty and sweet with a silky mouthfeel and full body. Caramel, honey, fresh baked bread, and chestnut notes are most noticeable, while vanilla, cherry, peppercorn, chocolate, oak, and floral notes are also present. We highly recommend gongfu brewing for best results. This tea can be made weaker (use less tea than recommended) for a more intense sweetness or made stronger (add more time than recommended) for an intense malt flavor.

Ingredients: Taiwanese Black Tea

Recommended Brew Time: 3 minutes 30 seconds
Recommended Amount: 2 level teaspoons of tea for 8oz of water

So Long, and Thanks for All the Licorice
One of our customers, Sasha, challenged us to create a unique licorice masala chai custom blend. We ended up loving her blend so much, that we decided to offer it on our website. The name of this tea is a reference to one of the owner's favorite authors, Douglas Adams. This soothing tea features licorice; however, the spice notes are also present and linger long after the sip and meld with the licorice notes. With each sip, the licorice and spice notes seem to become stronger yet they are not overly aggressive. While this tea is fantastic plain, this blend shines with a little rice milk and sugar.
