Lemon French Macaron
This tea was created by the winner of our Custom Blend Contest. In October of 2013, we held a contest to send in ideas for a custom blend. A panel of judges chose the 10 best ideas and we created a poll on our site. The concept for this tea won the most votes, so we worked with the winner, Mary, to create her dream blend. This tea embodies the flavor of a lemon flavored French macaron and has rich cream and sweet cake notes. Almond notes can be found weaving their way through each sip of this decadent dessert tea but give way to mild French vanilla and malty notes. Lemon is the most prominent flavor and is mellow at first but then finishes tart. The zing of the lemon and creaminess linger long after each sip. We recommend sipping this tea at cooler temperatures. Adding sugar will mellow the lemon and transform the tea into a dessert treat. For a short interview on the making this tea, please click HERE.

Due to the high elevation, this region is cooler which means the plants will mature at a slower rate, causing the tea to be full-bodied with a sweet and gentle melon flavor. Orchid notes are predominant and linger long. Light asparagus and grass notes peak their way throughout each sip. Fresh churned butter notes are also noticeable. This well-crafted, high grade tea has a silky mouthfeel and is exceptionally refreshing. This tea is not eligible as a free sample.

Ruby Pie (Custom Blend Contest Winner)
This tea was created by the winner of our Custom Blend Contest. In October of 2012, we held a contest to send in ideas for a custom blend. A panel of judges chose the 10 best ideas and we created a poll on our site. The concept for this tea won the most votes, so we worked with the winner, Sarah, to create her dream blend. This version has only been slightly modified from the batch of tea that she won. Ruby Pie is designed to taste similar to strawberry rhubarb pie. The pie crust notes are immediately noticeable followed by rhubarb and lingering fresh strawberry and vanilla notes. Hibiscus adds a hint of tartness to supplement the rhubarb notes but does not overwhelm the tea. Adding some sugar will intensify the strawberry and rhubarb notes while still maintaining the pie crust notes. For a short interview on the process of making this tea, please click HERE.

Our Sansia Black originates from Sansia, Taiwan. This region primarily focuses on green tea, making this an unusual tea. Our Sansia Black utilizes a local varietal, Qingxin Ganzai, and is AAA graded. Pesticides are not utilized on this tea to allow green leafhoppers to bite the tea leaves, which causes the leaves to begin the healing process. The healing process creates the honey notes in this tea and the bites begin the oxidation process. Our Sansia Black is malty and sweet with a silky mouthfeel and full body. Caramel, honey, fresh baked bread, and chestnut notes are most noticeable, while vanilla, cherry, peppercorn, chocolate, oak, and floral notes are also present. We highly recommend gongfu brewing for best results. This tea can be made weaker (use less tea than recommended) for a more intense sweetness or made stronger (add more time than recommended) for an intense malt flavor.

Ingredients: Taiwanese Black Tea

Recommended Brew Time: 3 minutes 30 seconds
Recommended Amount: 2 level teaspoons of tea for 8oz of water

Shiva's Breakfast
Shiva's Breakfast is an Indian Breakfast tea that combines tea from three key growing regions in India (Assam, Darjeeling, Nilgiri). This blend was created for tea drinkers that prefer their breakfast blends intense. Shiva's Breakfast has chocolate, bergamot, grapefruit, pepper, wood, cinnamon bark, and floral notes and finishes sweet. This tea is stronger than our Malty Irish Breakfast and is less malty and sweet; however, it is more citrusy, chocolaty, and complex. Please note that our steeping recommendation was set for no additions of milk or sugar. For a more intense flavor we recommend increasing the quantity to 1 1/2 teaspoons per 8oz of water.

So Long, and Thanks for All the Licorice
One of our customers, Sasha, challenged us to create a unique licorice masala chai custom blend. We ended up loving her blend so much, that we decided to offer it on our website. The name of this tea is a reference to one of the owner's favorite authors, Douglas Adams. This soothing tea features licorice; however, the spice notes are also present and linger long after the sip and meld with the licorice notes. With each sip, the licorice and spice notes seem to become stronger yet they are not overly aggressive. While this tea is fantastic plain, this blend shines with a little rice milk and sugar. For a short interview with the brains behind this tea, click HERE.

Ingredients: Organic Guranse (Nepalese Black Tea), Natural Super Concentrated Flavor Powder Licorice (Dextrose, Natural Flavors), Organic Cinnamon Chips, Organic Anise Star, Safflower, Organic Fennel, Organic Clove, Organic Nutmeg, Cardamom, Organic Natural Flavors (Blend is completely vegan)

Taiwanese Wild Mountain Black
Our Taiwanese Wild Mountain Black originates from indigenous wild tea plants grown between 2,500 feet and 5,000 feet in the surrounding mountains of Yuchi Township in Taiwan. The tea picking season for this tea is July through August and the supply is limited because the tea is wild. During this time, the tea master will wake up around 4 a.m. to travel the mountains with local tea pickers in search of wild tea. Similar to our Gui Fei Oolong and Mi Xian Black, the leaves of our Wild Mountain black are also bitten by leafhoppers. These bites cause the plant to initiate the healing process which produces sweet honey notes. Notes of fresh baked pastries and honey linger. Some gentle raisin and caramel notes are also present in this smooth and refreshing tea.

Ingredients: Taiwanese Black Tea

Recommended Amount: 2 teaspoons of tea for 8oz of water Recommended Temperature: 212 F (boiling)

Tamarind Pop
This tea was originally custom blended for a customer but it was so unique that we decided to offer it to all of our customers. Tamarind Pop is sweet with notes of caramel, raw cacao, vanilla, and tamarind and finishes with a slight astringency. Add a little brown crystal sugar for a completely different tasting tea. With a little sugar this tea tastes just like a tamarind soda. The tamarind taste is intense and melds with a rich caramel flavor.

Three Friends (Orange, Marshmallow, Chocolate)
One day we got a call from Marina, a local shop owner, asking us if we would be interested in selling packaged tea in their store, ShowCase Collective, in Bordentown, NJ. We were very excited to be a part of a shop that sells high quality products from local artists. We got to spend a good amount of time in the shop handing out samples of our tea and getting to know two of the owners, Marina and Roya, and got to hear about how creative the third owner, Cindy, is. The two owners were so amazing and inspiring that we wanted to create a blend for the shop that would speak about each of their personalities. Marina is energizing, fun, and has a wonderful spirit. For her we chose orange. Roya is warm, friendly, and family oriented so we chose chocolate for her and the Zhen Qu base tea. Cindy, the creative owner, gets marshmallow because it adds that extra creative element to the blend. This tea has strong orange notes followed by marshmallow notes and dark chocolate notes that linger. The chocolate is very dark and just misses being bitter. Three Friends really shines with a little sugar. The dark chocolate becomes milk chocolate, the orange is juicy, and the sweet marshmallow remains prominent.

Organic Japanese Puerh
Looking for something completely different? Then we highly recommend giving this puerh a try. Our Organic Japanese Puerh originates from the Isokawa region of the Shizuoka prefecture in Japan. This unique tea was invented fairly recently and is made artificially with an organic malted brown rice culture and a combination of first and second flush harvest tea leaves. The leaves are pan fired and fermented for 3-4 days. After that period, a small amount of fresh leaves are added for 2 days. The aroma of the liquor has roasted chestnut notes with a lingering sweetness. This puerh is a strong smooth tea with a drying sweet after taste and buttery quality. Strong notes of roasted chestnuts can be detected. Cacao, tabaco, and brown rice notes are also present with a hint of fruitiness. This tea is somewhat coffee-like but not nearly as strong. Purple Tea of Kenya
While still Camellia sinensis, purple tea is a new varietal that is propagated by grafting and cutting as opposed to seeding. This particular varietal is known as TRFK 306/1 and is rich in anthocyanin (a flavonoid), which pigments the leaves a purplish color. Purple tea was primarily developed for tea health products and is rich in antioxidants. Malvidin, Pelargonidin and Delphinidin are prominent in purple tea. The purple species has been in development for 25 years in Kenya and is more resistant to frost, disease, drought, and pests. This is the most versatile of the purple teas. When experimenting with different temperatures and times it can take on qualities similar to a green, oolong or black tea and can range from very mellow vegetal notes to astringent red wine-like qualities. We highly recommend experimenting with 160F, 180F, and boiling water temperatures and recommend steeping the tea between 3 and 5 minutes.
